I have a confession to make... I had roast turkey for supper, so I didn't have as much of a meat free Monday as the title might suggest! I actually want to share with you a vegetarian frozen meal I had the other night which was really nice! I decided to save the post until today because the brand supports a campaign called Meat Free Monday...
So, what is it?! I had a vegetarian lasagne made by Linda McCartney Foods and it was very nice! Often I'm sceptical of vegetarian food... Being a fan of meat I can't understand why anyone would opt for Quorn instead, but this lasagne proves that Quorn can be very nice!
I have to admit, I thought I had bought a vegetable lasagne rather than a vegetarian lasagne, so I was actually expecting to see some vegetables(!!) but the meal didn't disappoint! It was easy to cook in the microwave or oven straight from frozen, and even using the microwave it was nice and crispy around the edges (undeniably the best bit about lasagne!).
I decided to try theLinda McCartney range because it looked healthier than the supermarket's own brand ready meals, it looked tasty and (big plus!) it was actually cheaper too! Having tried it I'll definitely have it again when I need a quick, tasty and filling meal!
There is also a good collection ofvegetarian recipes on their website if you'd rather cook yourself!
Do you have any healthy and filling ready meals you'd recommend?
