If all else fails I can rest assured that Yo Sushi will pay me to stay away from their kitchens...!
I bought the sushi necessaries with a friend with the aim of recreating some sushi favourites without the hefty price tag...
To make sushi we needed:
- Sushi rice (yeah, it's a special short grain rice)
- Sushi vinegar (who knew?!)
- Seaweed (we bought a pack of 12 sheets from a local oriental supermarket)
- Bamboo rolling mat (I think it's necessary, though admittedly doesn't change the taste at all)
- Fillings (this may have been where we fell short...)
Boiling the rice and adding the rice vinegar was really simple... Just weigh it out and chuck it in a pan.
But rolling is actually surprisingly difficult. You can see in the photo just above that I kept squashing mine, so they became Sushi Ovals rather than rolls!
With a bit of practice my rolls became more convincing - I found that it helps to roll it much tighter in the centre and that helps it stay round.
Anyway, what let me down more than anything else was what I thoughtlessly shoved inside my sticky rice and seaweed! I recommend making sushi as it's a lot of fun, but steer clear of these three taste bud offences:

- Chivey Red Leicester cheese
- Smoked Salmon trimmings (the grey bits), which are unbelievably salty
- Cream cheese that is past its 'best by' date - it may look delicious and crumbly... But think of it as you would lumpy milk. Not nice.
